Breakfast Ice Cream

....or in our case, for dinner tonight!

W is increasingly fussy about fruit. It cannot have a spot or softness in the tiniest form at all or he refuses to eat it. Lately, it seems as if apple slices and raspberries are the only fruits he enjoys, so here's a sneaky way to increase his fruit intake.

Coconut Milk Whipped "Cream"

Whipped cream is such a wonderful treat....on coffee, hot chocolate, pies, etc.  This whole non dairy eating really hurts one's whipped cream tooth! I have tried making a tofu version  and it was tasty but not as fluffy as I had hoped.

So, this will be my latest attempt. Coconut milk, chilled, spiced, and whipped....mmmmm....that just sounds rich and delicious.

Bring on the Ranch!

I love Kraft dressings. Filled with chemicals, sugar and other words that I cannot pronounce. We have not had these hear tattack enducing, taste bud freezing, cellulite building bottle of salad toppings in our fridgidaire for years.
And now, we don't even miss the Ranch Dressing because we have a homemade version that is even tastier!
Oh yeah.....and.....I'm willing to share the recipe. Aren't you so lucky!

Ranch Dressing Mix
1/2 cup onion powder
1 Tbsp celery salt of Vege-Sal (used VS)
2 Tbsp parsley flakes
1 Tbsp poppy seeds
1 Tbsp dill weed
2 tsp garlic powder
2 tsp sweet basil
1 1/2 tsp salt
1 Tbsp dry sweetener
Mix together and store in an airtight container. Makes 1 cup.

Ranch Style Dressing
1 cup mayo of your choice
1 Tbsp lemon juice (optional)
1/2 cup water
1 rounded Tbsp Ranch Dressing Mix
Mix & serve with tossed salad or as a dip for crudites.

YUM!!! Healthy yum! No fillers, no mystery names, chemicals, etc.

Where did I find such a recipe? Why the 7 Secrets Cookbook of course. It's one of my all time favorites when it comes to vegan, healthy from scratch foods.

Dinner Tonight


It's been ages since I posted a recipe.
A Foodie post is not the most exciting topic of all, but goodness knows we all need a little meal inspiration at times. Often, my inspiration comes from other blogs and of course, Pinterest.
Tonight's meal was a Pinterest find which I tweaked to become Gluten Free and Vegan.....cause that's how this howse rolls....as I sit here with a tub of Vanilla Coconut Bliss by my side.

As I mentioned, I was inspired by the pic on Pinterest. It's description included lemon juice and parsley. I couldn't find a recipe on line with these ingredients so the linked one above was close. My changes included balsamic vinegar instead of vermouth, vegan "parmesean", and rice pasta.
The end result was yummers! It was almost a little sweet. And W said it smelled like garlic toast. Mmmmm.....
W and I really enjoyed it and of course, R wouldn't let it cross his lips. That little fella has gotten a bit picky. If it's different he expresses an immediate "I don't like it." And stubborn? Why yes, he is as he won't even give in for a taste.
So, W and I enjoyed this for dinner tonight.
Hope you try it one day too. It's easy and hearty. A nice change from traditional spaghetti with meat sauce.

Tasty Tuesday

My poor deprived children have been begging for cookies and yummy treats.
The poor neglected things. No sugar means very few treats.
So, I broke out the cookbooks, the Agave Nectar and the little race car apron. With a shirtless but apron clad young boy we made the best Free Eating Brownies. So good that a certain mother who forgot to put one in a snack bag for school was spoken to by no less than three people because it was very upsetting! It even came up in the IPP! So good that I'm going to share the recipe with you!

Brownies

1/4 cup gluten free flour mix
1 TBSP flax seed meal
1/3 cup unsweetened cocoa powder
1/2 tsp salt
1/4 tsp xanthan gum
1/4 cup canola oil
1/2 cup honey (I use Agave Nectar)
2 eggs
1 tsp vanilla extract
2 TBSP water

Preheat oven to 350. Lightly grease a 9 in round or square pan.
In a medium size bowl, combine all dry ingredients. Stir briefly. Add the remaining ingredients and stir well. Batter will be the consistency of molasses. Spread in the prepared pan. Bake for 20-25 min, until a toothpick inserted in the middle tests cleanly and the top begins to appear dry.

Do you ever struggle getting your kiddos or even your husband to eat veggies? Although mine love veggies...meat first, veggies second....it's nice to spice it up a bit for them. Most kids love a dip! Which is a challenge for our Free Eating regime.

And then I found this! The Nutty Broccoli. And sometimes I just go over the edge and only make the sauce. Imagine! Try it. It's pretty yummy. However, if you have nut issues, back away from the computer...far, far away.

Nutty Veggie Sauce
2 TBSP peanut butter or nut butter...bet pea butter would work too!
1 TBSP Braggs or soy sauce
1 TBSP orange or apple juice
Mix ingredients together in a small saucepan on medium heat. Heat until warmed through. Serve over steamed broccoli or as a side for fresh veggies.

Paula Deen Gluten Free


No, I did not attempt to massacre one of Paula Deen's scrumptious southern recipes with the Free Eating madness. For the record, I love Paula Deen. She tugs at my deep southern roots.
The food, the accent and even the hair. Also, she's hilarious. Did you see the episode when she added a large hard chunk of butter to a working mixer and it flew out? Complete with screams and guffaws from her and Oprah.
Yes, it was a Paula Deen moment in the kitchen last night.
It was cooking/baking madness and the Peach Crumble recipe called for heated pineapple juice with tapioca starch as thickener. Well, wouldn't it be easier to blend in the blender? Maybe.....if the lid didn't pop off and hot pineapple juice flew revved everywhere. Luckily my reflexes managed to kick in and I jumped out of the way. Paula Deen and the butter all the way!
On the stove, in the oven or the blender there was Peach Crumble, adapted from Alicia what's her name of the popular vegan book....
and....
Banana Date Muffin Tops from my favorite churchy cookbook...the Sat sabbath people, what's their names? 7 Secrets Cookbook.
Spicy Peanut Veggie Soup ala How It All Vegan...those cute, cute, cute girls from the West Coast.
My thoughts were crumble all week for breakfast, soup all week for lunch and the muffin tops for VBS snack. The Muffin tops are delish and won't last until tomorrow's VBS! W thinks the date chunks are jam. Cutie!

Dairy...oh how I dislike thee.


So, we tried dairy again. Goat milk. After much begging and pleading from W, we gave it a go, starting on Saturday. Allowing goat milk with cereal in the mornings and the odd glass throughout the day. Maybe two a day.
What a regret.
By Monday, W spent the day on the couch. Which I thought was weird, but just chalked up to a busy camping weekend.
Tuesday.....super runny nose.
Wednesday....ear infection and super runny nose. Crying in the afternoon because his ear hurts so badly. Crying when drops were administered. Which is completely unlike W.
Thursday....it's almost 3am as I write this....W is awake due to coughing; ear still sore, nose still running. Thank goodness for the couch, a cozy blanket, and Leapster. After an hour or so of struggling to sleep, we are now settled on the couch for a while.
Oh, Dairy, how could you do this to us....again? We were desperately hoping for a change. For the ability to enjoy a little goat milk. No such luck. I guess it was worth a try.....???

Now, due to this reaction, W and I will be missing out on Canada Day festivities, and a trip to the Ponoka Stampede as well. Instead, we will be laying low, napping, and off to the chiropractor to help those ears drain and stay open. Ah....summer fun!

Second to None


My little Free Eating boy is often requesting "hot dogs".
Oh-oh....sad, aren't they a childhood experience? Just not an option for our family.....until today!
All natural, all beef hot dogs with no fillers, no msg,natural casing and a very, very low dose of nitrates. I'm so excited! So is W! The staff here are phenomenal as they offered to make us any type of sausage we prefer and will do so with no nitrates too..."just provide a list of what we can and cannot have". This is life changing!
So, hello hot dogs, hello regular camping meals...HELLO!

To all my vegan, cow loving friends....sorry, tofurkey just doesn't cut it for us. Too much soy, too much wheat, too much stuff. We'll repent somehow.

Finally!!


Okay, you all, it's no secret that since we went to a Free Eating regime, my baking S*^CKS! I've found it really difficult to use different flours, no sugar and have baking turn out moist, tasty and not dry as chalk.
Try and whistle after consuming some powdery rice bread....I dare ya!
Last night I put together two recipes found in Eating for Autism and finally, F-I-N-A-L-LY, I have succeeded in making two kinds of muffins that my family enjoys.
Hot damn & Hallelujah! (Can you hear the angels singing??)
Two you ask? Well, yes! I was practising for Bup's upcoming third birthday...3!!....and also a special birthday cake for W as he is attending a birthday party on Saturday and he will have his own special little cake so that he can join in the eating portion of the festivities.
Now to master an icing or frosting. Until then, here's the successful recipes:
Carrot Cake
1 cup GF flour mix (or brown rice flour)
1/2 cup canola oil (I used coconut oil)
1/2 tsp salt
1/2 tsp baking soda
2 tsp GF baking powder
1/2 tsp Guar gum
1/2 cup carrot
1/2 cup zucchini
1/2 cup agave nectar (or honey)
2 eggs
1 tsp vanilla
1/2 tsp cinnamon.
Preheat oven to 350. Lightly grease a 9in pan.
In a med bowl combine flour and oil. Stir briefly. Add remaining ingredients and stir well. Batter will thicken with mixing. Spread in the prepared pan. Bake for 30-35 min until a toothpick test comes out as clean.

Double Chocolate Muffins
3/4 cup GF flour mixture
1/2 cup canola oil
1/3 cup cocoa
1/2 cup applesauce, unsweetened
1/2 cup agave (or honey)
1 tsp vanilla
2 eggs
1 tsp GF baking powder
1 tsp baking soda
1/2 tsp guar gum
`1/2 tsp salt
1 cup GFCF semisweet chocolate chips or carob chips
Preheat oven to 350. Place muffin liners in muffin tins.
In a mixing bowl, combine flour and oil. Mix well. Add the remaining ingredients, except chips and mix well. Batter will thicken as it is beaten. Fold in the chips.
Divide batter among 12 liners. Bake for approximately 17-21 min until a toothpick inserted tests clean.

By the way...as I write this only one carrot muffin still exists. Hello W!
This morning when I asked Bup if he would like a muffin, he vibrated with excitement and exclaimed with great fervor, while dancing in one spot, "A muffin!! Just yike Moween's howse! Muffin!"

Sweet Potato Enchilada


Super-yum! This GFCF recipe was a total hit at last night's dinner. Even our niece who doesn't normally like sweet potatoes raved about it. Funnily enough, growing up I didn't like them either and my dad was a huge fan. It's the southern influence I guess. Growing up with Kentucky rellies results in lovin' the southern food....sweet potatas, milk gravy,hushpuppies, catfish, etc. As a kid they were just baked with a touch of brown sugar and butter, and as an adult, I'm trying all sorts of different recipes and truly like them....sometimes. THIS is one of those times!




Sweet Potato Enchilada
1 large onion or leek, diced
1 tsp minced garlic
1/8 tsp cumin
1/4 tsp coriander
1/4 tsp chili powder
Dash cayenne pepper
1/8 tsp garlic powder
3-4 cups sweet potatoes, boiled & mashed - I use a mix of sweet potatoes & yams.
1/2 cup salsa
8 GF corn tortillas cut in quarters
CF cheese ( Cashew Cheese is the cheese of choice in our house)
Saute onion and garlic. Or steam together in the microwave. Add spices to onion mixture and cook until translucent. Add to mashed sweet potatoes. Adjust seasonings. Spray a baking pan with oil. Layer with half of the salsa, half of the tortillas, sweet potatoes, remaining salsa, and remaining corn tortillas. Top with CF Cheese, if using. Bake at 350 for 20-30 minutes, until done.
Yield: 8 servings-193 calories per serving.

The Wicked Queen's Apple & Food Challenge Friday


Remember in Snow White when the wicked Queen genetically modified an apple with poison to kill the sweet Snow White?
Well, that apple isn't just in Snow White. I bought four of those apples today. By accident. By the innocent sneakiness of a happy little 4 yr old boy who put a package of "Grapple"s in our cart.
An apple injected with artificial grape flavor.
What the??? (as W would say).
Cause really...a nice crunchy apple needs to be injected with flavored crap to increase the appeal?
Ugh. The sickeningly sweet smell of them from the package is enough to bring the Kool Aid man running through the streets. Maybe it was he who thought this up, not the wicked Queen.
Regardless, if my child bites this apple, I'll be begging to sleep until Prince Charming is home from the hockey game to wake me!

Artificial Sweeteners
They are everywhere. The diet revolution made them a day to day norm in our diets. There is so much controversy with this. Health wise. Of course, it's a cazillion (official number of course!) dollar industry so the companies responsible want us to believe in the health benefits. Do you avoid Artificial Sweeteners? Do you love them & swear by them?
As you all know, I've been a bit of a Diet Coke addict. *ahem* I drink it for the caffeine (a whole other post), it's cold, and I like the taste.
So.
I know this needs to change. Now. And here's what's helping me change my mind.
1. Weight gain. My family doctor talked to me this week about there is lots of evidence that artificial sweeteners CAUSE weight gain. My body doesn't know the difference between sugar & a "calorie free" sweetener. It's something sweet & the body reacts as such.
2. Formaldehyde. My son's naturopath gave me information that as's turn into formaldehyde and over time cause MS like symptoms.
Both of those should be enough to scare me off forever!

We don't have fined sugar in our home. We use Agave nectar, brown rice syrup, and pineapple juice and the family has reponded well to it. Even my Favorite Husband doesn't use sugar in his coffee any longer. Wuhoo!

Now, to stop buying Diet Coke. Now.

Sunday Dinner

We strayed from our usual Sunday pancake supper in order to be joined by friends for Sunday dinner. We dined on a feast of roast chicken, creamed spinach, mashed potatoes, oriental broccoli and a sweet potato salad. Mmmmmm... It must have been pretty good as there is not a scrap of chicken left...not even for soup....and few other left overs.



What was really neat about the visit is that these friends have a young daughter who has an ADHD diagnosis and food allergies and sensitivities as well.



It was wonderful to speak with another family who can relate and has ideas to share...successes to show...trial and error lessons to teach too. Mrs. Isle Madame even brought two huge bags of gluten free flours and a GF Bread Cookbook. What a treasure!



Their little girl's food allergies are soy, corn, beans/legumes, bananas, dyes and enriched flour. Unbleached flour is fine for her. Interesting, hey? The soy issue is huge. There is soy in so many foods. Hidden. Renamed. ~ It's all about super-sleuthing to locate the hidden culprits.



I'm toying with the idea of redoing the Elimination Diet for W. To see if there is a difference. To see if I need to tweak things further or can add anything back in. This needs some thought....talk with the Naturopath and the energy to do it all again.



One of our favorite recipes from last night, was Tosca Reno's Sweet Potato Salad with exotic spice mix. YUM! Truly sweet potatoes, not yams, with leeks, purple onion, raisins, molasses, super spices such as cumin, paprika, cayenne, cinnamon, nutmeg....I'm drooling just writing this!

Breakfast of Champions


As the boys dine on sausage and sweet potatoes a la nude....what's a little nudity between friends after all this is a house of boys. As the boys dine on sausage and sweet potatoes a la nude....what's a little nudity between friends after all this is a house of boys.
