Summer Salads


Mmmmm....summer is a wonderful time for delcious salads. Salads of all sorts. Green leafy salads, potato, pasta and the pretend salads...desert "salads" made with whipped cream, pineapple, banana and shaved chocolate. So tasty but definately the term salad is used loosely.
Yesterday we had a Broccoli Pasta Salad served with our BBQ'd burgers during an evening dinner on the deck. The burgers had shredded cheese mixed into the raw patties along with worchestershire sauce. Below is the salad recipe:
Broccoli Pasta Salad
3/4 box of whole wheat rotini pasta, cooked
2 crowns of broccoli finely chopped
4 pieces of cooked bacon coarsely chopped
3 green onions chopped
large handful of raisins
1/2 cup of frozen grapes coarsely chopped
1 cup mayo
1 TBsp lemon juice
1/4 cup honey
1/4 cup chopped pecans
Mix it all together in a largish bowl, refrigerate until cool. Enjoy.

  1. I agree that the term salad is very interpretive at times, but I love all kinds.
