Solo Weekend

Recently, almost a month past now, I was given an incredible gift from my Favorite Husband.
A three-day weekend on my own!

These gals kept watch over me throughout my solo adventures.
Holy Hula.

I probably shouldn't express quite so much glee in this. However, once I got my head around the reality of a weekend alone, then decided I am not going to be miserable from missing them so much, it was fantastic! Ooops! Is a dedicated wife and mom supposed to admit such things? Maybe not.

There was sleeping, uninterrupted sleep, vacationing in my own city....going to areas that I haven't been in years, discovering kitschy shops such as Blame Betty and Dick & Janes, some work at home, a yarn influenced garage sale, the mountains, time well spent with a fun friend and more uninterrupted sleep.
It was fabulous!

The Breakup

Dear Ron,
You need to know that we are done.
We are through!
Ca put.
Finito.
O-V-E-R.
I am so tired of you and can't believe it's taken me this long to come to this. You have been flirting and tempting me since I was 12 yrs old. 12 for goodness sakes! Sad to say, that it was once known (when I was 16yrs) that the quickest way to my heart was through you. I even had an interested suitor bring me a surprise from you as a token of affection. It worked as I ended up dating that boy....for a while anyway and then my good sense took over. Why has it stayed away so long, when it comes to you?
You lure me with your promises of "special" and the sweet & savory that is the core of your characteristic. But then it's blatantly obvious that you are taking advantage of me as I always pay on our dates! You never foot the bill!! Imagine the things I can treat myself to by saving $15 per week....which is what I had been spending on you. At least a new pair of shoes by the end of the month....maybe a manicure...or one hour with a personal trainer which I now need.
By the way, you're a bit of a pervert too. Focusing too much attention and dwelling on my derriere! Ack! How could you!?
You know that I'm married with children and yet you still tempt me. One of your most incorrigible moments is tempting my small children with the promise of toys; useless, plastic toys that clutter up my car as well as offering a place to play...slides, tree houses, airplanes, etc.
And now you're available 24 hrs?! Well, who cares! Not me. You will not see the likes of my gracing your establishments ever let alone in the middle of the night. I will be home with my husband. Oh, and believe me, he is well aware of the affair and more than willing to forgive me, without counselling even.
This may have been our theme song in the past. It's a new day though, and I have chose this ditty as the new theme song.
So, take your smiling face, red curly hair, free smiles and go away.
I am done.
Forever.
Amen!
M

Birthday Bup - 2yrs!

Mr. Two Yrs Old. Wow!

And it's like the light switch of 2 was turned on. He is now clearly willing to express his temperament, willfulness, teasing, laughing, hugging, kissy face, dancing, singing, hockey playing self.

It simply amazes me that our R is 2yrs. I still consider him my baby until I really look at him and see that he is a size 3T, 30 some pound, 32 inch tall little boy, with sparkling blue eyes, kissable round cheeks and a big, fluffy little-man hands.

He has had a dynamic year. One of seizures, meds, hospitalizations, tests, diagnosis, a little camping, trips to both grandparents, swimming, playgroup, speech therapy, copying his big brother's adventures, falling in love with Elmo, Baby Einstein, & Mighty Machines, asking for books, eating anything and nothing at meals, becoming our hockey guy, sliding down the big slide all my himself, counting to 10, snuggling, running away and all that comes with being Two!

We love our Bup....through and through and look forward to what this year brings.
Yay for an Elmo & friends cake!

Birthday friends! Miss E & R celebrating their birthdays together with a yummy bday cupcake.

Friends are the best way to celebrate!

Handsome blue eyes, a little smile, and a cone cake too.

What a super day!

Happy 2 Bup!

Our family birthday celebration was at Heritage Park. Bup enjoyed his first carasel ride, then promptly fell asleep on the boat-swing. We hadn't even been at the park for half an hour! Birthdays are tiring! Sweet sleep Birthday Boy!

Foodie

Food is a necessity. Our fuel.
Apparently I like a lot of fuel! Ah well, that's a whole other discussion better left unsaid at this point.

Creating dinner sometimes behoves me. There are days when I enjoy trying out a new recipe and others when I wish I had a personal chef to delight our palates and clean the kitchen .

One friend was serving her boys pizza pops and fries for dinner on a busy night and said she thought of me during this meal. Which was funny because I'm sure my family had packaged fish and chips the day before! So, there are moments when it's not all home-cooked here even though I do stay at home. The sins of a stay at home mom!

Here are some of the recipes we've been enjoying as of late.

Favorite Husband's Favorite Chicken

Package of skinless, boneless thighs...my Favorite husband is a thigh guy.

1 190z can chunky diced tomatoes

generous sprinkle of Italian or Pasta seasoning (I use VE Pasta spice)

grated mozzarella cheese

Place chicken in sprayed 9x13 pan. Pour tomatoes on top. Sprinkle spice. Top with grated cheese, enough to fully cover top. Bake at 375 degrees for about 30 min. Until bubbly with melted cheese and chicken is fully cooked.

This is so easy and super tasty. B gives compliments every time I serve it.

Yogurt Cheese

Plain yogurt, gelatin free such as Astro original Balkan Style yogurt. Gelatin free is the key to good separation of the whey.

Place in cheese cloth lined strainer over a medium size bowl. Leave on counter for about an hour then transfer to the fridge overnight. Will have a cream cheese like consistency.

Again, super easy 'cause I'm all about being easy!

This YC discovery is all courtesy of Clean Eating by Tosca Reno.

I used this in place of cream cheese on a Cool Veggie Pizza. Our guests loved the "pizza" and asked for the recipe even.

I love it! I use it in place of mayo (add a splash of lemon juice & pinch of dry mustard), cream cheese, and even for icing. Regular yogurt, un-cheesed, is used in place of sour cream at our house. I've broke up with mayo, sour cream, and cream cheese. All cheese. As W needs to be cassein free. One would think this break up would diminish the size of certain parts of my anatomy....not so! Ugh. Hmmm...maybe I should break up with McDonalds too?!

For Bup's birthday cupcakes, I used:

YC Icing

1 cup YC

1/2 tsp peppermint flavoring

1/2 cup icing sugar

Super! Light, thick, tangy and the kids loved it too!

And then there's this super spinach dip a friend, we shall call her Thelma, introduced me to. It's a Weight Watcher's recipe. It's yummy! And...I'm not breaking up with store bought spinach dip.

Spinach Dip

4 cup(s) spinach, fresh, chopped (about 2 oz)
1/2 cup(s) light cream cheese
1/2 cup(s) fat-free sour cream
1/4 cup(s) crumbled feta cheese
1/4 cup(s) chives, fresh, minced, divided
2 tsp fresh lemon juice
1/4 tsp black pepper
1/4 tsp table salt, or less to taste (optional)
Instructions
Place spinach in a small saucepan with 2 cups of water. Bring to a boil over high heat and then cook for 1 minute; drain well.
Place spinach, cream cheese, sour cream, feta cheese, 2 tablespoons of chives, lemon juice and pepper in a blender; puree. Taste dip and add salt if desired. Spoon dip into a serving bowl and sprinkle with remaining tablespoon of chives. Yields about 3 tablespoons of dip per serving.

*Note* I didn't use the blender & I substituted green onions & bottled lemon juice. Just as tasty!

Gluten Free

We are playing with going Gluten Free. I need to bite the bullet and do it. It'll be better for W. We've introduced rice pasta, use this Gluten Free cookbook and quite enjoy it, Rice Milk, and are fairly close to being cassein free. Remember I broke up with cheese although we still use plain yogurt.

Bup's birthday cupcakes were gluten free and tasty! I simply substituted Bob's Red Mill Biscuit and Baking Mix Gluten Free in place of flour, eliminated the baking soda, baking powder as they are in the mix and used a regular chocolate cake recipe. I also added some cherry pie filling just to make them extra tasty, baked them in flat bottom cones and topped them with the YC icing. The kids devoured theirs as did the Little Ones at playgroup on Wednesday.

That's our food revelations for now. Other than I have discovered how W breaks into the pantry to raid the hidden stash of marshmallows and Kraft caramels for Christmas baking. They're now in the garbage and W stands on the freezer handle, then stands on the pantry door handle to reach up and unlock the lock at the top of the door jam. Determined, fearless and successful. Until the mother clues in and throws it all away.

The Gymnast

As you may have noticed from previous entries, our W is a bit of a Houdini/climber/jumper = homegrown gymnast.
So we've decided to foster those skills for good instead of mischief.
W is enrolled in gymnastics three times a week (overkill? maybe, but this is my high energy child) and is loving it. It's amazing to see these little one's learning new skills every day.
Of course, there lack of fear is a positive characteristic when it comes to this sport.
He is not one bit scared to hang upside down from the bars and then drop into the pit. Listening, staying with his group, and the safety landing are still a work in progress but he'll get there. All in due time. Until then, we'll enjoy watching him balance on the beams, swing from the bars, do doggy drops on the trampoline and chat with his fellow gymnasts.

Oh, to have the courage of a child. It's truly amazing.

Thankfully, there is a pre-school room for R to play in while W is in class. Although sometimes he manages to sneak out until I catch him racing for the balance beams. Tricker! Then there's the issue with claiming the chairs in the pre-school room as his own. Which means the other kids may take a hit or kick to the shin if they sit in said chair. Yes, that's right, our sweet little Bup can be a bit of a bully. Can you believe it?! Shocked me too, but it's real. So are the tears of the two yr old little girl that he kicked in the shin....although she did hit him in return, she's the youngest of four so is a tuffy too.
Watching the gymnast and refereeing our little UFC member.
It's a busy hour at Mountain Shadows!

Urban Geographic

Look who's made our front step her hatching centre.

The boys love it. W states in his falsetto voice, "Oh she's a momma bird" They enjoy seeing her sit in her nest, which took her days and days to make as she's chosen a precarious spot that caused her efforts to fall on the step every morning, but she perservered. It'll be great for them to see the cycle of nesting, hatching, and wee Robin babies.
I only hope she doesn't dive bomb or poop on us!

Spring Knitting

Finally the completed Modern Fashionista sweater. My first garment for myself. And it's actually wearable in public! And I've even had compliments on it! Wuhoo!

Tailored, soft, a little classy, dress up or down. Just like me!

This was knit with Patons Rumor, which is not discontinued...not sure why as it's a lovely alpaca blend.

Now, I've moved on to this little shrug and it was knit with Bernat Solo in Smoke. I'm almost done. Just the button and blocking to do. This project was quick and easy...not tangy. There may be another in my future.

However, there are two little boys who could use a new cardi....hmmm.....to knit for who?

It's All A Phase, right?

We've progressed from, "You're the nicest Mommy in the world"
to....
"You're not my mom anymore and I'm not your son!"

Next he'll be telling me I'm not invited to his birthday party!

Since when does this start at 3yrs? And who taught him this? I thought these kind of comments were reserved for school age?

Ah well...."the wheels on the bus go round and round, round and round, round and round...."

Moments Like These

There are moments, days, when a mother feels like she is inept at parenting. When she hears words coming from her mouth, or screaming in her head, that her parents used in their parenting day...ones that she swore she would never use....like...."I'll spank all of you then I know I've got the right one!" (We were a family of seven children.) "Stop your crying or I'll give you something to cry about." " It doesn't hurt. Stop your crying." "Children are to be seen and not heard." Etc. Etc.

There are nights when a mother goes to bed with a heavy heart knowing she did not do her best that day. Worried that she is wrecking her children, scarring their little souls, but she gets up again in the morning and starts all over again.

And then there are these moments.
When that same mother is tucking in her child at naptime, snuggling beside him in his race car bed, and he lays forehead to forehead and quietly says something. "Pardon?"

"You're the nicest mommy in the whole world."

These are the moments.

The Erratic Afternoon

The boys and I had a fabulous afternoon expending energy with a prairie walk to the Erratic. Of course, there was a lot of climbing. Gasping and "Get down please!" could be heard very clearly. Some other sun worshippers laughed and also encouraged a little boy to stay safe.

This child is so sure of his footing and where his body is at.
It amazes me.
I would have fallen for certain, not having near the grace or agility that W has.

Bup loved exploring as well.
He was too cute.
Running to keep up with big brother, running to escape his mother, and of course a little climbing too.
"Monkey see...Monkey Do!"

The second highlight had to be the "ikeem" from Marv's Classic Soda Shop. Very quaint, 50's style diner, with a heap of memorabilia from that era and the boys didn't touch any of it! They were extremely patient while waiting for the 70+lady in her pink, mini shirt-dress uniform and black sheer stockings with the once a week coiffed hairstyle to scoop their cones.

Spring is here and we are loving it!
The erratic outdoors, a scenic drive and "ikeem"....perfect afternoon with two perfect boys!

Medical Degree

Once again I find myself wishing for a doctorate of something other than just life in general.

Yesterday evening we discovered these covering W's little body basically from head to toe.

Any ideas?

Hives?

They're itchy. Benadryl did the trick at bedtime but I hate to just bandaid the situation without knowing the cause. Maybe it's just toxins being released.

Who knows?
Not me.
