Simple "Cheese" Sauce

It really is simple.
It really is cheesy.
My family loves it and we are cheesers! Well, we would be if we weren't dairy free....except today when I let Bup enjoy a secret frozen yogurt at IKEA while W was happily unaware, playing in Smalland. Ooops...there's my torrid secret...sometimes I give Bup dairy when no one else is around.
So, on to the Cheese!
I have made this recipe a multitude of times and used it for many things, such as topping veggies, pizza, snails (rice macaroni...my boys call them snails...), etc. Feel free to give it a try if you're looking for a dairy alternative to cheese. Be aware, if you have a nut allergy then this is NOT for you. Stay away anti-nutters!
Simple Cheese Sauce
1 cup raw cashews
2 cups water
1/2 red bell pepper ( I use bottled ones)
2 TB sp nutritional yeast
1 tsp onion powder
1/2 tsp sea salt
1/2 tsp garlic powder
Blend all ingredients together in the blender. Transfer to a sauce pan and cook on medium heat, stirring constantly, until boiling and thickened. Serve as desired.

  1. We LOVE cheese here too. And it's hard when one kid can have it and the other one can't, yet they both WANT it! Luckily, Ashton loves raw banana "icecream", so he's pretty happy, because I'll let him have it anytime he wants some. But the cheese is the hard part. Thanks for sharing the recipe, I am going to try this soon!
    (Oh, and I just had to say: I love IKEA! ;)
